To speed up a pending transaction in MetaMask: open the transaction in your activity list, click 'Speed Up', and MetaMask will resubmit the same transaction with a higher gas price. Alternatively, you can manually replace the transaction by sending a new transaction with the exact same nonce as the stuck one but a higher gas price — this causes the new transaction to overwrite the pending one in the mempool.
Remember that on Polygon, transactions must be processed in nonce order.
